I admit, I used to fear the sweet potato when I was younger, I hated it but I changed my tune on this large, starchy, sweet-tasting, tuberous root vegetable. Smothered in butter and brown sugar…not tooo much..but no marshmallows or pecans, I have nothing against them, I just don’t have any in the house right this minute. I decided to replace my regular Idaho’s as a lunch option today. Yum!
